As today is #NationalSpinachDay, here are my five favourite ways to eat spinach.
1. Stir fried
Add garlic, chopped pine nuts, a squeeze of lemon or lime, and anything else that takes your fancy! Spinach is delicious stir fried. Opt for coconut oil if you can.
2. With salad
Throw spinach into a bowl with mixed leaves, cucumber, cheery tomatoes, plum tomatoes, sundried tomatoes, raw onion, seeds, olives, and any other toppings you fancy! Also delicious with feta, falafel and halloumi. YUM.
3. In curry
I love spinach curries. Some favourites include saag aloo, saag paneer and saag bhaji, or you can make your own veggie at home and just throw in some spinach!
4. In pesto
Spinach goes really well in pesto, and there are a ton of spinach pesto recipes to try.
5. In a smoothie
And finally, my personal favourite – spinach in a smoothie. This is definitely one of my favourite ways to eat spinach. I personally love spinach and banana. Blend with some vegan protein powder (or your favourite protein powder) for a great breakfast or snack.
